I've loved this recipe for quite some time, but I was never sure if I should share it or not since I don't even like banana bread but it's one of Kevin's favorite snacks (sometimes I think he lets banana's get over rip so I have to bake a loaf!) and one of my favorite things to bake. It's a super easy and quick recipe, you don't even need a mixer!
Vegan Banana Bread!
(based on the recipe from The Baking Bird)
3 very ripe bananas (nearly all brown)
1/4 cup cinnamon applesauce
1/4 cup canola oil
1/2 cup sucanat sugar
2 tablespoon molasses
1 cup all-purpose flour
1 cup white whole wheat flour
3/4 teaspoon baking soda
1 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon sea salt
Preheat the oven to 350 degrees fahrenheit. Lightly grease a 9x5 inch loaf pan.
In a large mixing bowl, mash the bananas really well. Add the applesauce, oil, sugar and molasses, then whisk briskly to incorporate. Sift in the two different flours, baking soda, cinnamon, nutmeg, and sea salt. Mix the wet and dry ingredients together. If you're using chocolate chips or nuts, fold them at this point. Transfer the batter to the bread pan, sprinkle a dash of cinnamon on the top.
Bake for 45 to 50 minutes. When done a knife or toothpick inserted in the center should come out clean. Remove from oven, let cool in pan for 10 minutes then transfer to a cooling rack.

This looks yummy, banana bread for breakfast! I will only eat banana's in bread or smoothie's....I kinda feel about them like I do mushrooms :)

ReplyDeleteOh man this looks delish! I might have to switch up my own vegan recipe a bit and try this. Have you ever tried flax seed as an egg subsitute in yours? That's what I use when I don't have applesauce...insane how moist it turns out.

I'm not a fan of bananas... well actually I'm allergic, lol, but it still looks nice. :) I would love to try vegan bread to see if it tastes any more different from the normal bread.
ReplyDeleteI don't care for bananas, but my husband and daughter love them. He has admitted to letting them get over ripe and then asking for banana bread. I will have to try this recipe next time. Thanks! (And, we had those mugs when I was a kid and used to drink milk out of them. I might have to get some for my kids now!)

OH OH OH!!! Banana Bread was one of the first recipes that my mom ever taught me how to make! We've been toying with Vegan recipes as of late. I am so psyched to try this out!
