Recipe -Baked Vegan Donuts!

I made donuts!!
Here's the down low on how to get these tasty treats
First you need a donut seed, you can get these at any grocery store.
Plant it in a small pot full of brown sugar. Place in sun and water daily!
In about a week you'll have a sprout! Exciting right!?
Two more weeks pass and lookie what we have here, a fully grown donut!
Hehehe!!
The real recipe....
Baked vegan donuts.
(recipe via veganyumyum)

Ingredients:
1 cup all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/4 tsp salt
1/4 tsp nutmeg
1 shake of cinnamon 
1/2 cup soymilk
1/2 teaspoon apple cider vinegar
1/2 teaspoon vanilla
Egg replacer for 1 egg 
4 tablespoons Earth Balance or other vegan margarine

Preheat oven to 350º F.
In a large bowl, whisk dry ingredients together.

In a small saucepan, combine wet ingredients over medium low heat & mix until margarine is melted. You should be able to stick your finger in the mixture without burning yourself. 

Add wet to dry and stir, forming a soft spongy dough.

Using a spoon, scoop out dough into an ungreased nonstick mini donut pan & smooth out the tops of them. Fill them just below the rim. Overfilling them will result in muffin tops.
Bake them for 10-12 minutes. Remove from pan and place on wire rack to cool.

The glaze:
1/2 cup powdered sugar
1 tablespoon soy milk

Whisk ingredients together.

Dip top half of the donut into the glaze, and place on wire rack to harden.

Overview:
Would I ever bake them again?
  • YES! I cannot wait to try other variations (ie. chocolate covered!)

Pros?
  • Quick
  • Glaze was so easy to make!
  • Deeeeelicious.

Cons?
  • Doesn't yield many
  • I found spooning the dough into the pans to be difficult and time consuming.


Modifications?
  • No nutmeg added.
  • Approximately 5 shakes of cinnamon as opposed to one shake.
  • Added a 1/2 teaspoon of vanilla to glaze.
Notes:
  • I highly reccomend this recipe. They're great for breakfast and for a snack!
  • I made one batch with one coating of glaze and a second batch with two coats of glaze. Both were delicious but the ones with one coating were very moist and sticky on day two, but the ones with two coats of glaze weren't. 
A mini donut pan was another one of my thrifty finds from this weekend. Brand new still in the box, I couldn't resist! I'm really happy I bought it.

    4. That's so funny I made doughnuts on Saturday but mine were the deep-fried ones!! Very tasty but very fattening lol Yours look much cuter than mine... mine had chocolate buttons in them!

    16. I have made these before (but in a big donut pan) and they are AMAZING!! I would recommend adding the nutmeg, it gives it that something extra. I'm bummed that it only makes 6-8 of the large donuts, but it's probably for the best or else I'd be eating them all the time! Next time I make them I'm definitely going to add color!

    17. when i make mini cupcakes, i know that it helps if i put the batter in a large sized ziplock bag, then snip a little piece of off one of the corners. its easier to just squeeze the batter into the small indents in the pan, rather than spooning it. i think it would also be really good for doing the multi colors too!

    19. oh goodness kaylah, i was seriously reading this and i was like shut up you can make donuts with fruit loops!!! i HAVE Fruit loops and brown sugar yesss! then i got to the last photo and realized i will not be making fruit loop donuts lol hahahaha seriously my stupid moment of the year. :[ lol but that donut pan is amazingggg it looks like it works SO much better then my donut machine! (i just can't figure it out lol) but im SO trying this recipe they look delcious!

    45. I just made this recipe today! I don't have a mini donut pan, so I used a mini muffin pan instead and they came out looking like cute little cupcakes. They were so tasty I just gobbled down six of them shamelessly.

    57. The easy way to put the dough in the pan is to put the batter in a freezer/storage bag, close the top, and cut off the corner, and then use it like a piping bag to squeeze it into the donut spaces in the pan. =)
